Caramelized Brussels Sprouts

This is a dish that will win over even the biggest Brussels sprouts skeptics. This recipe brings out the natural sweetness of the sprouts, creating a perfectly balanced dish for your Thanksgiving table.

Ingredients:

  • 2 lb Brussels sprouts, halved
  • 3 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 1/4 cup balsamic vinegar
  • 3 cloves garlic, minced
  • 1/4 cup toasted walnuts (optional)
  • Sea salt and freshly ground black pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the Brussels sprouts, cut side down, and cook for 5–7 minutes without stirring until they are browned and slightly crisp.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Drizzle with honey or maple syrup and balsamic vinegar, stirring to coat evenly.
  5. Cook for another 3–5 minutes, allowing the Brussels sprouts to caramelize and soften.
  6. Season with salt and pepper, and toss with toasted walnuts if desired.

Harvest Salad with Cranberry Vinaigrette

This vibrant salad is a fresh take on fall flavors:

Ingredients:

  • 4 cups mixed greens (arugula, spinach, kale)
  • 1/2 cup dried cranberries (unsweetened if possible)
  • 1/2 cup roasted butternut squash cubes
  • 1/4 cup goat cheese crumbles (optional)
  • 1/4 cup toasted pumpkin seeds

For the dressing:

  • 2 tbsp cranberry juice (no added sugar)
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1/4 cup olive oil

Instructions:

  1. In a large bowl, combine greens, squash, cranberries, goat cheese, and pumpkin seeds.
  2. Whisk dressing ingredients and drizzle over the salad before serving.

Maple-Glazed Salmon

A flavorful seafood option for a Thanksgiving twist.

Ingredients:

  • 4 salmon filets
  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 1/2 tsp black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together maple syrup, Dijon mustard, soy sauce, garlic, and black pepper.
  3. Place salmon filets on a parchment-lined baking sheet and brush with the glaze.
  4. Bake for 15–20 minutes, or until the salmon is flaky.

Garlic & Herb Cauliflower Steaks

A vegan-friendly main dish that’s as beautiful as it is tasty.

Ingredients:

  • 1 large head of cauliflower, sliced into 1-inch steaks
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Brush the cauliflower steaks with olive oil and season with garlic, paprika, thyme, salt, and pepper.
  3. Roast for 25–30 minutes, flipping halfway through, until golden and tender.

Feel-Good Pumpkin Pie

Finish the feast with a lighter dessert that doesn’t skimp on flavor:

Ingredients:

  • 1 cup canned pumpkin puree
  • 3/4 cup almond milk
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 premade almond or oat crust

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together pumpkin puree, almond milk, maple syrup, eggs, and spices.
  3. Pour the mixture into the crust and bake for 40–50 minutes, or until set.
  4. Let it cool completely before serving with a dollop of coconut whipped cream.

Dark Chocolate Almond Bark

A simple treat for chocolate lovers, perfect for sharing.

Ingredients:

  • 8 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup almonds, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup shredded coconut

Instructions:

  1. Melt the dark chocolate in a double boiler or microwave.
  2. Spread the melted chocolate onto a parchment-lined baking sheet.
  3. Sprinkle almonds, cranberries, and coconut on top.
  4. Let it set in the refrigerator for about 30 minutes, then break into pieces.
